Lightning McQueen Cupcakes – Shay’s Recipe of the Week

My best friends little boy turned 3 this weekend and he chose the 'Cars' theme for his birthday. Tif always orders a sheet cake and then I fix a dozen cupcakes to match. Her kids love 'Shay-Shay's' cupcakes. They have challenged me and my skills that's for sure.

Not wanting to disappoint the cutest 3 year old ever, I did my best to make him some Lightning McQueen cupcakes. Here is how I made them, they were actually pretty easy once I got the first couple down.
