I've made a couple of versions of Mexican cornbread but this version is a meal in it's self. With ground beef, beans, cheese and more. All you need to add is a salad and your dinner is ready. I honestly don't remember where I found this recipe but an online search will bring up any number of variations on this recipe. This particular one is really simple and fast to make.

Ingredients:

    • 1 1/2 lb. ground beef
    • 1 can Rotel (drained)
    • 1 can beans (Ranch style, Pinto, Black, etc.)
    • 1 can cream or kernel corn
    • 2 pkgs. Mexican cornbread mix
    • 2 c. grated cheddar cheese

Preheat oven to 350.

In a skillet brown your ground beef and then add the can of Rotel and can of beans. Let this simmer about 10 minutes.

In a bowl prepare your cornbread mix following the package directions. Add in your corn and 1/2 of the cheese.

Pour 1/2 of the cornbread mix into an 8x8 pan. Pour all of the meat mixture, the rest of the cheese and top with the other 1/2 of the cornbread mixture.

Place in oven and cook until cornbread is done. Super easy, good and everyone (even kids) will like it.
