My honey and I have decided to try to lose a little weight and that means changing our diet. We love our pastas, breads and desserts so making a change isn't going to be easy. After much looking and researching the one we thought we could both stick to is the Atkins diet, it's not as restrictive as many others.

Having said that a few of my recipes will now reflect our change. We just started Sunday so we will see how it goes. This is one of the many recipes I found online that we decided to try. It's low in calories and carbs but quite filling and doesn't taste bad at all. The trick here is to use cauliflower in place of high-carb potatoes. On Atkins you can have lots of meat and vegetables but no carbs so tonight for dinner we had pork chops, salad and cauliflower mash.

Ingredients:

  • Cauliflower florets
  • Grated cheddar cheese
  • salt/pepper

Steam your cauliflower until tender.

Grate your cheese, enough for about 1/4 cup per serving.
Individual servings are 1 c. steamed cauliflower and 1/4 c. grated cheese. Add salt/pepper and other spices of choice (we used a little garlic salt). Mash your cauliflower and cheese together with a fork.

The taste and texture reminds me of a baked potato. It's not bad and much healthier for you.

Then, of course we fried up some naked pork chops in a small amount of olive oil.
