My wife and I decided the try the new restaurant in Clyde, Bonterra Blu, for dinner tonight.  She found their official website online earlier today, and lo and behold, it turns out Phil Collins had dinner there on Monday! (1/3/11)

The photo on their blog page doesn't lie.  One of the chef/partners studied under Emeril Lagasse and the food is described as having some cajun flair.  Looking forward to an interesting evening in Clyde, Texas!  Here's the blog text with a photo:

Amazing but True...

It was actually hard for us to believe, but the rumors are true. The dynamic Duo of West Texas, Chef Joel Trueblood and Steve Howard, along with the Bonterra Blu/ Tru Blu Catering, LLC team served dinner to Phil Collins on Monday, January 3rd. It was an honor and a privilege to serve such a kind and gracious superstar. The menu was a compilation of some of Phil’s favorites. Mark Maberry, MD, hosted the event.  Dr. Maberry is well known in West Texas for his amazing palette and knowledge of wine, another one of Phil’s favorites. (via bonterrablu.com)
