My house loves meatloaf so much so that we have to make extras for sandwiches later. Usually my boyfriend makes it but I decided to try my hand at it this time and it actually turned out better than his. Mainly because he forgot the bread crumbs last time! This is actually a really easy recipe that I made up ahead of time and just popped in the oven the next evening. I also added my favorite side dish, baked broccoli. This was a really easy and delicious meal.

Ingredients:

(Meatloaf)

  • 1-2 lbs ground beef
  • 1 medium onion chopped
  • 1 medium bell pepper
  • 1 egg
  • 1 cup bread crumbs
  • salt/pepper to taste
  • 1/2 tsp. cumin
  • 1/2 tsp. oregano
  • 1/2 tsp. garlic powder
  • 1/2 c. ketchup
  • 2 Tlbs. prepared mustard
  • 2 Tlbs. brown sugar

 

(Broccoli)

  • 3-4 Broccoli heads (florets only)
  • spray butter/olive oil
  • garlic salt
  • pepper

 


In a large bowl mix together your ground beef, egg, bread crumbs, onion, bell pepper, salt, pepper, garlic powder, cumin and oregano. (I actually double this recipe for leftovers)

Place in a greased 9x13 pan and pat flat. (I used a few more bread crumb sprinkles on top)

In another small bowl mix together the mustard, brown sugar and ketchup. (The brown sugar just gives this a great flavor)

You can refrigerate or go ahead an pop it in the oven at this point. Bake at 350 for 45-1 hour.

Now for the broccoli. Place your florets on a pan and spray with butter or olive oil. Sprinkle with some garlic salt and pepper. Place in oven at 350 for about 10-15 minutes. I put mine in just before I take my meatloaf out so they are ready at the same time.
