I've made a couple of versions of Mexican cornbread but this version is a meal in it's self. With ground beef, beans, cheese and more. All you need to add is a salad and your dinner is ready. I honestly don't remember where I found this recipe but an online search will bring up any number of variations on this recipe. This particular one is really simple and fast to make.
